Aloo ka Halwa (Potato Halwa)


Ingredients:
3-4 medium sized Potatoes
4-5 tbsps Ghee
1 cup Sugar, or to taste
Cardamom Powder, 1/4th tsp
Raisins and sliced almonds and pistachios, for the garnish 

Method:
Pressure cook the potatoes till done.
Peel and mash well till they form a smooth paste
In a heavy-bottomed kadhai, heat the ghee.
Add the mashed Potato and cook on a slow to medium flame for 10-12 mins, stirring continuously.
Add the sugar and mix well.    Keep cooking on a medium flame till the sugar is completely dissolved (around 10 mins)
Sprinkle the Cardamom powder and mix well. Cook for another 5-10 mins.
Switch off the gas.
Garnish with the raisins and sliced dried fruits and dig in immediately!:)
